You could go some place warm where there is a beach. My son LOVED the beach when he was that age. Corpus Christi or some place like that could be a blast. Plus it will be a change from February weather (unless you live some place like that already!)

Try a condo on the beach
Having three kids myself I got to ask… How can you have fun with a one year old? LOL unique try Hawaii for the pro bowl week Its pretty fun plus the luau’s beach Big Mo and USS Arizona tons of things you can do. PLus its one year old friendly. Whatever you decide I hope you have fun….
How about going to the snow. My son loved it when he was 1.
take her to the beach somewhere south carolina is great she will love the sand and there are always places to go. just pick a location and then google it and see what else is there. that is the best thing to do. you can even go to the library and get vacation books. that is what i always do.
